Gastro Roster: Weekly Rankings

I’m not the type of person to forget to eat because they’re working. I’ll be the person who forgets to work, because they’re so busy eating. So, naturally, I wanted to share some of the things that have been on my plate this past week. Eats are ranked from highest to lowest.

1. Plantains

This is probably one of my favorite simple foods, but I hardly order it because it’s never made well. I was coming home from a boring gym session and spotted a little tray covered in tin foil. My Tia had delivered these beauties a couple of minutes before from one of her favorite local street vendors. They were equally soft and crispy placing them in 1st place for this week’s rankings.

2. Veggie Tacos

I knew I was having KBBQ with my cousins for dinner, so I wanted to go heavy on the veg for lunch. I dry-roasted some mushrooms, used some leftover potatoes and the rest fell into place. It was a welcome reminder that meatless meals are a great way to stay creative in the kitchen and give your body a break from digesting animal protein. 3. Tuna on Crispy Rice

There’s nothing quite as satisfying as eating a dish you haven’t had in a long time. I love the pairing of the crunchy fried rice with the cold and sweet tuna. This sits a little heavy on my stomach, but that never stops me from negotiating with my sister to get the last piece. And if it couldn’t get any better, these are only $8 on the happy hour menu at our local sushi spot!

4. Gluten-Free Blueberry Muffins

I’ve been on a gluten-free journey for a while so any time I can enjoy a sweet treat I will embrace it with open arms. The only thing that could’ve made this recipe better would’ve been to replace the blueberries with chocolate chips. I like my baked goods to taste decadent and the blueberries bring a healthy vibe that I don’t really appreciate. Let me know if I’m wrong about this, and please don’t tell my mom I ranked this as #4.

5. Sunday Dinner

You might look at this and think it’s not a simple meal but this is what Sunday Brunch looks like for me. My dad takes over Sunday cooking, so we enjoy whatever meat he picks up from Northgate Market. My favorite thing on this plate is the chorizo, he lets it get charred on the grill, which is a quality you can’t get when you fry it on a pan indoors. It’s ranked at #5 because I eat a variation of this meal at least once a day, so to me, it’s just a little basic.
