Gastro Roster: Weekly Rankings #3
It’s been a busy week full of a little bit more home cooking which made it even harder to decide where to place each dish. By this point, you know the drill. Here are this week’s food rankings from highest to lowest.
1. Cookies & Coffees
Okay, you already know, I can’t stop talking about these GF Kiss Cookies, I made them at the end of the week and felt like every coffee or fun beverage needed to be paired with these cookies. They’re on the smaller side so I can never get away with eating just one. I used mint-filled kisses for this batch so when drinking it with my coffee it reminded me of the Philz Coffee mint mojito which put this combo in the #1 spot for me.
2. Nachos
I knew that as a stay-at-home daughter, I would be asked what we were having for dinner. I was feeling that end-of-the-week slump and didn’t want to get creative in the kitchen. So, I landed on nachos because they’re healthy enough and always a crowd-pleaser. I picked up some tomatoes to make a pico de Gallo and some dairy-free cheese to elevate the plate. The most effort was put into the ground beef which is quick to cook with any of your favorite sauces and seasonings. It was comforting and so satisfying, which put this at #2 for this week’s eats. 3. Crab Boil
It is the beginning of Lent, which means no meat on Fridays. As much as I disagree with this rule, it’s fun to eat different things when you take meat off the table. My family had the day off so we landed on a seafood boil. Somehow I’ve been able to pull off two, now three successful seafood boils. My mom made cilantro rice and my sister seasoned some melted butter to go with the boil. This was such a fun and messy meal. Some pieces of crab were overcooked but that’s on me, which is why it’s at #3 for this week’s rankings.
4. Pistachio Salad
I picked some random things left in the fridge mid-week and made a surprisingly good and hearty salad. I strongly believe salads have to have a good mix of textures to make them enjoyable. The pistachios added the perfect crunch and the acidic green apple worked well. I chopped some hard-boiled eggs to add protein and it held me over until dinner. 5. Chilaquiles
Remember lent? Yeah, you’re also not supposed to eat meat on the first day (Ash Wednesday) but I’m trying to get my protein in. This a whole other topic, but I consider myself “spiritual” and culturally catholic so I ate the meat! This plate is from my grandma’s favorite breakfast spot and I loved the chilaquiles because they weren’t soggy and the salsa was super mild. It ranked as #5 this week because again, it’s lent AND I WASN’T SUPPOSED TO EAT THIS!
