GF Low-Sugar Kiss Cookies
I am obsessed with these cookies. They are possibly easier to make than your regular chocolate chip and look like you spent more than only 20 minutes preparing these. As a bonus, the only sugar in these cookies comes from the Hershey’s Kisses.
Ingredients:
1 1/2 Cup GF Flour
1 Tsp. Baking Powder
1/2 Tsp. Salt
1/2 cup Peanut Butter (smooth)
4 oz Butter (1 stick) at room temp.
1 Cup Brown Sugar Monk fruit
Stevia Sweetener (10 drops)
1 Large Egg
1 Tsp. Vanilla
2 Tbsps. Non-dairy Creamer
1 Bag of Hershey’s Kisses.
Instructions:
Unwrap your Hershey’s kisses (30). Then start with the dry ingredients. In a medium bowl sift your flour, baking powder, and salt. Mix well and set aside. In a large bowl beat together the peanut butter, butter, monk fruit, and stevia. Taste the mix, and add stevia until you reach your desired sweetness. Then add the egg, vanilla, and creamer and mix well. Slowly add the flour mixture to your wet mixture and mix until well combined. Once the dough forms, scoop with a spoon to create 1-inch cookie balls. Space them out on a lined baking sheet and bake for 7-8 minutes. Once the cookies are a light brown color remove and quickly press the Hershey’s Kisses into each cookie don’t worry about any cracks on the cookies. Bake cookies for another 2 minutes let them cool and enjoy!
Tips & Modifications:
I used Trader Joe’s gluten-free flour for this recipe and it has the closest consistency to regular flour as long as you SIFT your flour. If using regular flour I recommend upping the flour by at least a 1/4 cup. You can also refer to the NYT recipe which inspired my version. If using stevia packets instead of liquid start by adding 2 packets. If you want to make these vegan use vegan margarine and swap the egg for a flax egg. For the flax egg, mix 2 tablespoons of ground flaxseed with one tablespoon of water; mix and let sit until it has a bouncy egg texture. You can use a bar of chunky vegan chocolate to press into the cookies to achieve a similar look. If you choose to use almond butter, be prepared to add more sweetener.
Also for these cookies, I used hot cocoa-flavored kisses and mint-filled kisses. I think it’s fun to play around with the flavor of the kisses so don’t be afraid to grab a fun flavor!
